Ventilation of kitchens involves exhaust and discharge of increased temperature air, full of moisture, steam, gases or odours. The exhausted quantity of air has to be replaced by fresh, and if necessary, preheated air. There are two types of exhaust kitchen hoods: conventional exhaust hood and energy-saving exhaust hood. Compared to conventional exhaust hood, energy-saving exhaust hood operates with 70% of fresh, unheated air supplied to the hood by means of a separate fan and a duct. Within the hood the supply air is fed to the adjustable jet-profiled slot through which it is discharged at increased velocity towards exhaust filters.

Grease trap filters are used in ventilation systems of canteens, kitchens and similar places. Their main purpose is prevention of grease accumulation in ventilation ducts and fans. Filter inserts are made of expanded aluminium sheets.
